This fast and easy herb-infused olive oil recipe is so easy to make. And instead of waiting weeks for the oil to infuse, you can add essential oils to enjoy it now. It makes a great foodie gift for family and friends and can be used for so many dishes!

I absolutely love my extra-virgin olive oil. I drizzle it on all my salads (and I make a delicious Caprese salad), and I'll top off my cooked salmon or chicken with just a bit of olive oil right before serving it to my family.

And while I love olive oil, I admit that herb-infused olive oil is even better. I remember going to expensive stores at the mall to sample infused olive oil and getting sticker shock at the bottle.

It's Easy to Make Herb-Infused Olive Oil at Home

You can make you own homemade olive oil infused with herbs, such as basil, rosemary, oregano and thyme for way cheaper than the stores. Yes, you can just add the herbs themselves to a bottle of olive oil and wait a couple of weeks for the oil to get infused, or you can use essential oils.

Yep, that's right. You can use essential oils (these are the only essential oils that I use) to infuse your olive oil. It's delicious.

How to Make This Fast and Easy Herb-Infused Olive Oil

1. Pour 8 oz extra-virgin olive oil into a glass container.

2. Add 3-4 drops of essential oils, such as Lemon and Rosemary or Basil and Black Pepper.

3. Optional: Add a sprig of rosemary, peppercorns, or a couple of cloves of garlic. This will add flavor over time (about 1-2 weeks) and makes the olive oil look really tasty.

3. Put the cap on the bottle and shake well.

About the Ingredients

The ingredients to make this infused olive oil are really simple. Just be sure to use high-quality essential oils that are made for dietary consumption. Most essential oils are not made for internal use so be sure to read the labels. Find out which oils I recommend here.

  • Extra-virgin olive oil is the best of this recipe. Be sure to get a good, quality brand.
  • Essential oils such as Basil, Rosemary, Oregano, Tarragon, Thyme, Black Pepper, Lemon, Dill, Lemongrass, Marjoram, etc. These oils help to infuse the oils immediately so you can begin to use the olive oil for your favorite dishes.

Ways to Use Your Olive Oil

You can begin using this olive oil right away because the essential oils help to infuse the flavors immediately. If you add a sprig of rosemary or peppercorns it will help to flavor the olive oil over time.

  • Drizzle on top of salads
  • Great with grilled chicken or fish
  • Drizzle on top of soups
  • Dunk crusty bread in it with some good quality balsamic vinegar

  • You're not cooking with this infused oil, so skip the neutral, high-smoke point oils, like canola, vegetable, and grapeseed. Instead, use an olive oil that has a buttery, sweet flavor profile. Avoid olive oils that are grassy, herbaceous, and bitter—while those are great on their own, they don't combine with infused flavors well.
  • As an option, add a sprig of rosemary, peppercorns, or a couple of cloves of garlic. This will add flavor over time (about 1-2 weeks) and makes the olive oil look really tasty.
  • Make sure to shake well.
